Hello everybody! It’s Chef Moe Marsh here once again to share, and today I want to talk about The magical “Crescent City” known as New Orleans, Louisiana!
In New Orleans, the food and the music go hand in hand with each other like a sacred dance moving to the rhythms of the drums in Congo Square or the jazz coming from Preservation Hall, or the smell of the Mississippi River mixing with the smell of the creole food cooking from a small neighborhood restaurant.
Yes, this city and place has been through the best of times and the worst of times but has been resilient through it all. So rich with history and culture, New Orleans offers it all to any music lover, foodie, or historian—or anyone lucky to be all three!
I would like to share a brief lesson about one of the most famous and influential chefs to have come out of this beautiful and mystic city, Mrs. Leyah (Leah) Lange Chase. Although the city of New Orlean just took a major blow by losing Mrs. Leah Chase and Dr. John with in a week of each other, these legends of food and music will live on and not be forgotten.
Mrs. Leah Chase was born January 6, 1923, and died June 1, 2019. She was a African-American chef from New Orleans known as Queen of Creole Cuisine, advocating both African-American art and creole cooking. Her restaurant, Dooky Chase, was a gathering place for freedom fighters and many civil rights activists in the 1960 during the Civil Rights Movement. She made a name for herself as a restauranteur and art collector of African American art, which she displayed throughout her establishment.
Mrs. Chase gathered a long line of accolades over her 96 years and will always be an inspiration to chefs for years to come. Chase was inducted into the James Beard Foundation, and also honored with a lifetime achievement award from the Southern Foodways Alliance. She also received a honorary degree from Tulane University.
I could go on and on, but will leave this for you as a way to delve further into her life and times—truly an amazing women of the times. I will leave you with her fried chicken recipe and hope you will enjoy.

From The Dooky Chase Restaurant Thanks Leah Chase
YIELD: makes 4 servings
Ingredients
1 3lb. Fryer
1 tbsp. Salt
1 tbsp. Black pepper
2 eggs ( beaten)
½ cup Pet Milk ( if not Pet milk any will do)
½ cup water
2 cups flour
1 tsp. Paprika
¼ tsp. Ground thyme
½ tsp. Granulated garlic
1 qt. Oil for frying
Preparation:
Cut chicken in eight pieces. Season well with salt and pepper. Set aside. Mix eggs, milk, and water. Pour mixture over chicken. Let sit for 5 minutes.
In a heavy paper bag, mix flour, paprika, ground thyme, and granulated garlic. Place chicken in bag with flour mixture. Shake until chicken is well coated.
Heat oil in a Magnalite fryer — oil should reach 350°F. Place chicken in hot oil. Fry, turning as chicken browns. Heavy parts such as breast, thighs, and legs will take 15 to 20 minutes, wings about 10 to 15 minutes. Drain chicken on paper towels.

Today is the 155th anniversary of the death of Brig. Gen. Thomas Greeley Stevenson, the name for whom Stevenson Ridge is named.
We always take a moment on this date to remember the fallen general. You can read this remembrance I wrote several years ago at Emerging Civil War.

When I have a free moment between work and household routines, nothing beats cracking open a new book and getting lost in the story. Of course, I always have a hard copy or paperback in my hands: the smell and texture of the book set the tone.
With so much going on in our daily schedules, just having the opportunity to read is a great way to wind down and relax. I thought I’d share my most recent and favorite books. Enjoy these wonderful books in front of a cozy fire, outside on your front porch, or even squeezed in during your lunch break.
A Girl on the Train by Paula Hawkins: Rachel, the main character, goes down a slippery slope trying to solve a local murder. Watching the victim everyday from the commuter train, Rachel somehow gets involved. You keep asking yourself while reading, “Why, Rachel? Why?” but she’s only trying to piece back together that This book has many twists and turns along the way, keeping you guessing who the murderer is and wondering whether Rachel’s life will ever return back to normal.
Big Little Lies by Liane Moriarty: This entertaining murder-mystery book has you guessing from the very first chapter: who and how did someone die at a PTA meeting? The story is told by the three main characters plus little snippets of parents talking to the police. Subtly, the author sends the message throughout the entire book that we all tell lies to each other and ourselves.
The Nightingale by Kristin Hannah: This was my most recent book. It might be a slow start, but the ending will have you wanting more. It’s a story about two French sisters trying to survive during World War II when the Nazi invaded France. The older sister is married with a daughter and is trying to get through the war the best she can. However, her younger sister cannot stand idly by while family and friends are dying and takes action behind her back. This book is full of love and tragedy as the author explores what we do in moments of great challenge.
Miss Peregrine’s Home for Peculiar Children by Ransom Riggs: This is Harry Potter meets X-Men plus pictures to add even more to the story. The whole series takes you on an adventure thru time loops from the present to WWII. After his grandfather dies, Jacob tries to find out if his grandfather’s old stories were true. Growing up, his grandfather would tell him stories of an island where children with special abilities lived, and it was protected by an older woman, Miss Peregrine. Once Jacob finds them, his story starts to unfold, as his teenage life is no longer as ordinary as he had originally thought.

You’ve heard the expression “fast as lightning,” but anyone who owns a dog knows that the one thing in the world faster than that can be a dog going after a dog treat.
Our friends at The Icing recently sent home a pair of tasty “pupcakes” for our four-legged family members, Emmett and Ollie. These clever little treats look like cupcakes but they’re made specifically for dogs. I have to admit, I can’t personally attest to their tastiness, but the dogs certainly can.
The Icing, located on Garrison Road in Stafford, supports the Fredericksburg SPCA (among its other charitable support), so it’s no wonder they’re baking up yummy goodies. Emmett and Ollie certainly appreciated it!
